SUMMARY The Steward position is responsible for washing, cleaning, and proper storage of all cooking utensils, equipment, flatware, and glassware. ESSENTIAL DUTIES AND RESPONSIBILITIES • Washes all wares in dishwasher or by hand. • Keeps all kitchen, storage, and receiving areas clean and organized. This includes washing and cleaning all trash areas. • Accountable for cleaning and maintaining all concession areas and self-serve locations. • Stores all dishes and other wares in proper areas in appropriate manner. • Deep cleans dish machine after each meal service. • Follows a thorough deep cleaning schedule of the kitchen, concession, self-serve, and any other F&B areas as specified by department leadership. • Responsible for daily heavy cleaning of kitchen equipment including mopping scrubbing sweeping (including fryers, grills). • Cleans and maintain dry and cold storage areas. • Performs all duties in a positive, professional manner. • Responsible for maintaining a consistent, regular attendance record. • Must be able to work the required work schedule, which may include nights, weekends, and holidays. REQUIRED SKILLS, KNOWLEDGE, AND ABILITIES • Restaurant experience is preferred but not required. • Must have the ability to be trained in the safe and effective use of heavy chemicals such as soaps, degreasers, and other materials used in cleaning and maintaining a kitchen and equipment that meets sanitation and health requirements. • Ability to read and understand simple instructions. • Must be able to understand temperature readings and adjust as necessary. • Must be able to work individually or with a team as necessary to perform assigned tasks. • Ability to work safely and efficiently within a fast-paced environment. • Must be able to maintain the appropriate Gaming License. PHYSICAL, MENTAL, AND ENVIRONMENTAL DEMANDS • Regularly required to stand and walk for entire shift. • Regularly lifts up to 50 pounds. Push and pulls up to 200 pounds. • Uses hands to grasp, handle, or feel objects, tools or controls. Must have the dexterity to hold and maneuver equipment, mop buckets, and carts. Will constantly need dexterity and strength to stack and load dishes, • Consistently required to reach with hands and arms, climb, balance, stoop, kneel, crawl and crouch. Ability to use a step stool or ladder. Reaches and lifts above head. • Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus. • The noise level in the work environment is usually loud in a kitchen environment. • Must be able to operate in mentally and physically stressful situations. • This casino has an enclosed gaming area where smoking is allowed.
